Chives, Allium schoenoprasum are an easy to grow herb garden favorite. Chives have been added to food for over 5000 years. The delicate slender leaves add a light onion flavor to recipes. A few sprigs of chopped chives make a great addition to egg dishes or potato salad. Chives are easy to grow in the garden or in containers if space is limited. Clumps of chives are a wonderful plant to use in ornamental herb garden designs.
Chives will grow best in full sun and well drained soil. Chives are perennial in zones 3-9. Plants die down to the ground in the winter and will push up new green shoots in early spring. Harvest sprigs whenever you need a delicate onion flavor added to dishes. The clumps will quickly send out new shoots so there is always a fresh supply.
